Orange and Ginger Oat Cookies
- 1 1/2 cups Oats (gluten free if possible) or 1.5 cups of ground almonds
- 1 1/2 cups of Gluten Free Self Raising flour
- ½ teaspoon of seasalt
- ¾ cup of currants
- 1 cup of walnuts toasted and coarsely chopped
- ½ cup walnut oil (Sainsbury)
- ½ cup of Malt extract ( Holland and Barrat)
- zest of 1 orange
- ½ cup of orange juice ( Use orange that you have zested)
- 1 tbsp peeled and finely grated fresh ginger
- 1 tsp vanilla.
Pre heat oven 180 C or 350 F. Line a couple of baking trays.
Mix all the dry ingredients in on bowl and all the wet ingredients in a separate bowl.
Then add wet ingredients to the dry ingredients and mix thoroughly.
Use a tablespoon to scoop mixture the smooth edges and flatten. Leave some space between each cookie as they will spread.
Bake the cookies until underside and edges are golden brown
25 mins approx.
Allow to cool.
Good for snacks as they contain both carbohydrates and protein. Also, the malt extract is a very slow releasing sugar that will give you long lasting energy.
